Chicken Tortilla Soup

Lucas likes this soup a lot, but always picks around the beans. He eats most of the corn, and chicken, but he mostly likes to soak up the broth with oyster crackers. 

From Around the House

  • Olive Oil 
  • Montreal Steak Seasoning (or S&P)
  • Red pepper flakes (optional)
  • Adobo Seasoning (optional)

From the Grocery Store

  • Chicken (diced breast or ground)
  • 1 can sweet corn
  • 1 can white beans
  • 1 can dark red Kidney Beans
  • 1 jar of Salsa
  • 1 small box chicken stock
  • 1 small can diced tomatoes in juice
  • Green Chile or hot Peppers (optional)
  • Sour Cream
  • Tortilla Chips or Strips

Directions

  1. Season and brown the chicken in olive oil until cooked-through, add to crock pot
  2. Drain the beans and Corn, add to crock pot
  3. Dump in the salsa (your salsa will determine how spicy your soup will be. If you like it mild, use mild salsa, hot = hot salsa, and using a fruity salsa will make it sweeter)
  4. Dump in the tomatoes (do NOT drain!)
  5. Add a box of chicken stock (or make your own)
  6. Add hot peppers or chiles to your taste
  7. Cover and cook on high for 4 hours, or low for 6 (everything's cooked, so just let it marinade!)
  8. Serve with sour cream and tortilla strips or chips

Chicken and Dumplings

I'm a HUGE fan of from-scratch, homemade things, but I'm a busy lady and don't always have time for that. Especially during Robotics Season, my life consists mainly of "dump-a-bunch-of-stuff-in-the-Crock-Pot-and-go" recipes. This is one of my go-to Classics, and Lucas eats it up like I'll never make it again.

From Around the House

  1. Crock Pot
  2. Whisk
  3. Salt and Pepper
  4. Water

Grocery List

  1. 1 pound boneless, skinless chicken breasts
  2. 2 Small Cans Cream of Chicken Soup
  3. Milk
  4. One Large Can of Refrigerated Biscuit Dough

The Recipe

  1. Dump both cans of the Cream of Chicken Soup into the Crock Pot
  2. Add one can of Milk, and one can of water. Whisk until smooth.
  3. Add salt and black pepper to taste. 
  4. Add raw chicken breasts.
  5. Cover and cook on low for 8 hours (or high for 4 hours).
  6. 30-45 minutes before serving, shred chicken with a fork or tongs.
  7. Open the biscuit dough, tear into pieces and stir into chicken mixture.
  8. Cover and cook on HIGH until biscuits are cooked through (they'll still be doughy, but done). This will take 30 to 45 minutes, depending on how quickly your Crock Pot regains heat after being uncovered. 

IMPORTANT: DO NOT uncover the Crock Pot for at least 30 minutes after you've added the biscuits. It will add a lot of cooking time!

Clinton's Favorite Chinchillas

No, it's not really Chinchillas, it's Enchiladas (haven't you people ever seen Super Troopers!?). Even though this is Clinton's favorite dish I make, Lucas really likes them, too. They take a while to make, but the great thing is the versatility and simple ingredients! Plus, leftovers heat up FANTASTIC! Serves 4 to 6 adults.

From Around the House

  1. Large Frying Pan
  2. Water
  3. 13 x 9 Baking Dish (glass is best)
  4. Pan Spray (such as PAM)
  5. A way to dispose meat drippings
  6. Stove
  7. Oven
  8. Large Wooden Spoon

Grocery List

  1. One Pound Ground Beef
  2. One box Hamburger Helper Cheesy Enchilada Mix
  3. 2 Cups shredded cheese
  4. 3 small cans Enchilada Sauce (Old El Passo) 
  5. 10 Large Burrito Shells (La Banderita Brand)
  6. Small Can Green Chiles (optional)
  7. Sour Cream (optional for garnish)

The Recipe

  1. Brown Ground Beef, drain.
  2. Prepare Hamburger Helper according to package directions (add a can of green chiles if desired).
  3. Pre-heat oven to 350 degrees while the Hamburger Helper is cooking.
  4. Grease baking dish with pan spray
  5. Pour one can of Enchilada Sauce in the bottom of the baking dish
  6. Once the Hamburger Helper is complete, use a large wooden spoon to scoop portions into the center of the large burrito shells. Top mixture with cheese, fold sides of shell in, and roll in burrito-like fashion. Tightly arrange rolled Enchiladas in baking dish, until full (or your Hamburger Helper runs out, whichever comes first), reserving some cheese.
  7. Pour remaining two cans of Enchilada sauce over the Chinchillas.
  8. Bake uncovered for 30 minutes
  9. Sprinkle with remaining cheese, bake additional 15 minutes or until cheese is brown and bubbly.
  10. Serve hot with sour cream


NOTE: Can also be prepared in the Crock Pot! Instead of placing ingredients into a baking dish, put it in the crock pot. Cook for 2 to 3 hours on low.

Crock Pot BBQ Chicken Breasts

Lucas LOVED this chicken, and really enjoyed the sauce (especially the dipping part! Dip makes everything better!). I served it with cheesy mashed potatoes and green beans from our local Farmer's Market. 

From Around the House

  1. Crock Pot
  2. Whisk
  3. Tongs 
  4. Sauce Brush
  5. Measuring Cups
  6. Small Sauce Pan
  7. Stove

Grocery List

  1. Split Chicken Breasts
  2. BBQ Sauce
  3. Brown Sugar
  4. Apple Cider Vinegar
  5. Apples
  6. Ranch Seasoning
  7. Montreal Steak Seasoning

The Recipe

  1. Coat the bottom of the Crock Pot with BBQ Sauce (I used about a cup of Sweet Baby Ray's Original sauce, and just eyeballed the amount)
  2. Mix a tablespoon of brown sugar with a tablespoon of cider vinegar in a measuring cup and whisk into BBQ Sauce.
  3. Add the Chicken Breasts (or whatever cut of chicken you happen to have on hand), with bone-side down in the sauce.
  4. Sprinkle Chicken with Montreal Steak Seasoning and Ranch Seasoning (I used about half of a Hidden Valley brand dry ranch packet for 2 breasts)
  5. Cover and cook on low for 3 hours
  6. Wash, core, and dice apples (I used one peeled Gala apple per breast).
  7. Uncover, baste chicken with BBQ sauce from the pot. Add apples.
  8. Cover and cook for 3 more hours (or until chicken is cooked through), basting every hour.
  9. Before serving, reduce sauce by removing one cup, and simmering on the stovetop for 10 minutes or until desired consistency.
  10. Remove Chicken and apples from Crock Pot, place in individual serving dishes.
  11. Pour reduced sauce over chicken, and serve with extra sauce for dipping!
