Chicken Tortilla Soup

Lucas likes this soup a lot, but always picks around the beans. He eats most of the corn, and chicken, but he mostly likes to soak up the broth with oyster crackers. 

From Around the House

  • Olive Oil 
  • Montreal Steak Seasoning (or S&P)
  • Red pepper flakes (optional)
  • Adobo Seasoning (optional)

From the Grocery Store

  • Chicken (diced breast or ground)
  • 1 can sweet corn
  • 1 can white beans
  • 1 can dark red Kidney Beans
  • 1 jar of Salsa
  • 1 small box chicken stock
  • 1 small can diced tomatoes in juice
  • Green Chile or hot Peppers (optional)
  • Sour Cream
  • Tortilla Chips or Strips

Directions

  1. Season and brown the chicken in olive oil until cooked-through, add to crock pot
  2. Drain the beans and Corn, add to crock pot
  3. Dump in the salsa (your salsa will determine how spicy your soup will be. If you like it mild, use mild salsa, hot = hot salsa, and using a fruity salsa will make it sweeter)
  4. Dump in the tomatoes (do NOT drain!)
  5. Add a box of chicken stock (or make your own)
  6. Add hot peppers or chiles to your taste
  7. Cover and cook on high for 4 hours, or low for 6 (everything's cooked, so just let it marinade!)
  8. Serve with sour cream and tortilla strips or chips
